RASPBERRY/BANANA CUPCAKES

DAY BEFORE VALENTINE'S DAY I SPENT IN A KITCHEN - BAKING. I MADE MY FIRST CUPCAKES! THAT WAS SWEET GIFT FOR MY LOVE. I WOULD LIKE TO SHARE WITH YOU THAT RECIPE.


INGREDIENTS FOR PIE:
250 G OF PLAIN FLOUR
6 TABLESPOONS OF SUGAR
4 TEASPOONS OF VANILLA SUGAR
2 TEASPOONS OF BAKING POWDER
PINCH OF SALT 
200 ML OF MILK (OR SODA WATER)
80 ML OF VEGETABLE OIL
2 EGGS
4 TABLESPOONS OF COCONUT 
2 BANANAS
250 G OF RASPBERRIES




METHOD OF PREPARATION:

  • MASH BANANAS (YOU CAN USE A BLENDER)
  • IN A BOWL, MIX DRY INGREDIENTS: FLOUR, SUGAR, VANILLA SUGAR, BAKING POWDER, COCONUT AND A PINCH OF SALT.
  • IN ANOTHER BOWL, MIX BANANAS, MILK (OR WATER), OIL AND EGGS.
  • SUCCESSIVELY MIX THE INGREDIENTS FROM BOTH BOWLS (DO NOT MIX TOO LONG, JUST UNTIL COMBINED).
  • THE FORM FOR MUFFINS SMEAR BY MARGARINE OR PUT MUFFIN CUPS. I'VE USED DOUBLE FORMS.


  • PUT THE DOUGH INTO FORMS. AT EACH MUFFIN PLACE PIECES OF RASPBERRY (JUST LIKE ON THE PHOTO BELOW).


  • BAKE IN PREHEATED OVEN FOR ABOUT 20-25 MINUTES AT 200°C.


INGREDIENTS FOR FROSTING:
6 TABLESPOONS OF SOFT BUTTER
1 GLASS OF CASTER SUGAR
100 G MASCARPONE CHEESE
100 ML OF CREAM 35%
COLORANTS


METHOD OF PREPARATION:


  • MIX THE CREAM TO STIFF, ADD BUTTER AND SLOWLY CASTER SUGAR WITH CONSTANT STIRRING.
  • AT THE END ADD MASCARPONE CHEESE.
  • DIVIDE MIXTURE IN SMALLER PORTIONS DEPENDING HOW MANY COLORS ARE WE USING.
  • ADD COLORANTS AND MIX PROPER. 


DECORATE YOUR CUPCAKES WITH FROSTING BY USING SPECIAL SYRINGE. YOU CAN ALSO USE SOME CANDIES OR FLAKES.
